1 lb. Frozen Petite Green Beans

2 cups Cream of Mushroom Soup

2 oz. Billy Goat Chips


  • Place beans under cool running water until thawed. ( About 5 minutes ) Gently squeeze the beans to remove any access water. Sprinkle liberally with salt and reserve in a bowl.
  • Pour off any remaining liquid at the bottom of the bowl and mix the soup and the beans. S & P to taste.
  • Place in a casserole dish. Crush the Billy Goat chips and sprinkle over the top of the casserole. Place in 350 degree oven uncovered for 30 minutes or until bubbling.
  • Serve immediately.



1 medium yellow onion, diced

12 oz. fresh button mushrooms, sliced

2 T. olive oil

1 qt. heavy cream

S&P to taste



Gently cook the onions in a heavy bottomed pan over medium heat in half of the olive oil until they become transparent. About 7 minutes. Then add remaining oil and slices mushrooms. Cook until all liquid from the mushrooms has been leached and evaporated. The bottom of the pan should look dry. Add heavy cream and bring to a boil. Lower heat to medium and reduce by 1/2. Let cool.


Add 1 c. diced bacon while cooking the onions.
Sprinkle the top of the casserole with shredded cheese before adding the Billy Goat Chips
